I wouldn't bother if I were you, surely the uni can hire someone with a bit more experience? Books on it are a waste of time, you'd have to actually KNOW the program to get the best out of it, if you did know the prog you'd know enough to write your own lesson plans and create your own files to work from, I know I wouldn't want to be 'taught' by a complete beginner who thinks books can help in any way, the only things you can really teach are the tools and how to use them, the rest is up to the individual.
The thing is, I used use it a few years ago but when I came back to it I'd forgotten most of the shortcuts and stuff. It's more a case of teaching people how to do some basic stuff for a couple of hours as part of a wider course.
Rather than just saying 'play with it and get a feel for it' which is obviously what you need to do in the long term to know how to use the whole programme , I'm going to teach the basics of how to use the tools, change colour levels, how layers work etc. The CS lessons fit that remit quite nicely. I think its naive to say that books can't help in any way - perhaps you've never used the right books, but some can be very helpful in terms of providing a framework to explore further.
